Rice Custard

Ingredients

1/2 cup of rice

2 1/2 cups unsweetened rice soy or canned coconut milk

2 teaspoons vanilla extract

1 beaten egg

2 tablespoons honey (or 1 teaspoon Nature Sweet Sugar Substitute)

2 tablespoons grated lemon zest

1 teaspoon grated nutmeg

Directions

Preheat the oven to 150°C (300°F).

Soak the rice in the milk for 1 hour in a small ovenproof dish.

Mix in the egg, sweetener and lemon zest.

Sprinkle with the grated nutmeg and bake in the oven for 1–1 1/2 hours.
